A Mother's Day Brunch

Since I probably don't say thank you enough, I wanted to do something simple to tell my Mom thank you for all that she does and is. As most people know, my Mom doesn't know a stranger. She treats everyone with respect and is always willing to give more than she receives. So I asked my Mom to list her favorite foods that she'd want for a Mother's Day Brunch ,and I went to town planning a brunch to say thanks.

To make the day even more special, I decided to use some of my Mom's china given to her from her Mom, Joanne and Aunt Mary.


It was a beautiful day to have brunch out on the porch!

Now, for the food...
The night before, I made the Strawberry Pie since the jello needs to sit for at least a few hours.
House Fresh Strawberry Pie Recipe
2 c. sugar
2 c. water
1/4 cup cornstarch
1 box strawberry jello
fresh strawberries (two normal size containers)
whipped cream
Cook sugar, water, and cornstarch until thick. Then add Jello. Pour over fresh strawberries. Put in baked pie shell. Let pie sit in fridge for at least 2 hours. Add the whipped cream & serve.
The next morning, I woke up and made the Quiche, Cinnamon Coffee Cake, and fruit salad (while drinking my fair share of coffee).
Here are the recipes to both:

*Added some broccoli to the recipe and cooked it with the onions.
*Also made a homemade pie crust and baked it at the same time as the quiche. To prevent the quiche mix from making the crust too moist, add some melted butter to the crust.

By brunch time everything was ready, and we were all eager to dive in and eat. I am extremely blessed to have my Mom in my life and hope she enjoyed her Mother's Day.
