Doughnut Muffins

This Easter weekend, many of us gather with family and loved ones after Church for an afternoon brunch. So I thought I'd try a recipe that I could make for this Easter Sunday. Now I try to be honest with ya'll about whether or not I like a recipe, so I am going to be honest about this one -- there was WAY too much nutmeg in the recipe. So before making I would suggest using less nutmeg (unless you like nutmeg) and add 1 or 1/2 tsp of vanilla. Had there been less nutmeg, these doughnut muffins would be out of the park good :-) Enjoy!

Ingredients For Muffin Dough:

1/2 cup white sugar

1/4 cup margarine, melted

3/4 tsp. ground nutmeg (I would suggest 1/4 tsp or none)

1/2 cup milk

1 tsp. baking powder

(I would also add 1 or 1/2 tsp of vanilla)

1 cup all-purpose flour

Ingredients To Roll Muffins In:

1/4 cup margarine, melted

1/2 cup white sugar

1 tsp. ground cinnamon

Directions

1. Preheat oven to 375 degrees & grease 24 min-muffin cups

2. Mix 1/c cup of sugar, 1/4 cup margarine, vanilla, and nutmeg. Stir in the milk, baking powder, and flour.

3.Bake in the oven for 15 minutes (or until golden)

4. While the muffins are making, set out the melted 1/4 c. margarine. In another bowl, mix the 1/2 cup sugar and 1 tsp. of cinnamon.

5. Once the muffins are done and have cooled some, take out the muffins individually and roll into the butter. Then roll into the sugar/cinnamon combined bowl.

6. Let the muffins cool, then serve!
