Seafood Gumbo


We decided to try making our own gumbo this week and were pleasantly surprised with the outcome. We put our own twist on this classic dish and used ingredients we love, in addition to a few we needed to use up. It turned out so well that this will become a new favorite this summer! Hope you enjoy!

Ingredient List:

I Box of Yellow Rice

1 Can Diced Tomatoes

2 ears sweetcorn (grilled)

6oz fresh crab

1lb fresh shrimp (grilled)

2 1/2c chicken broth

1 lime (or lemon)

2T butter

1/2t smoked paprika

Olive Oil

S&P

1. Clean shrimp and then prep for the grill. Drizzle a little olive oil and juice of one lime over the shrimp to coat and then sprinkle with paprika and S&P.

2.Grill at 400 degrees, 5 minutes on each side. Add your corn to the grill as well at this time.

3. Prepare the rice following the instructions on the package. Replace the water with chicken broth for added flavor. With about 5 minutes remaining, add the tomatoes, corn, and crab meat.

4. Remove the tails off the shrimp and add to the pot. Let simmer on low for an additional 5 minutes. Serve with corn bread and a cold beer!
