Homemade Noodles without a Machine

It's been a while since we've posted anything on here! Between Annie being very pregnant and me constantly traveling, it seems we haven't had a moment to settle down. Good news is, fall is approaching, bringing the cooler weather I'm sure we've all been craving.

When it starts to cool down, breads and soups always sound appealing. And it just so happens it has always been a goal of mine to make homemade noodles without a machine. With the noodles, I thought I could make some good ol' chicken noodle soup (but that's next post).

So I did some research and found that making noodles is a fairly simple process!

What you need:

2 cups of flour

1 tsp of salt

3 large eggs

roller

knife (I used a pizza cutter)

First you mix the two cups of flour and 1tsp of salt with your hands. I ended up adding a little more flour and 1/8 tsp of salt.

Make a center in the middle of the flour, and one by one, add in an egg, You are to mix each egg with the flour. *I also added half of a fourth egg...

Once all of the eggs have been added to the flour and salt, knead the dough until it is firm. It took me about 10-15 minutes. Once completed form into a ball and place in a bowl. Cover the bowl with a towel for at least 1 hour.

After an hour of the letting the dough settle under a towel, take out the dough and cut into fourths.

Take 1/4 of the dough out at a time, and roll into a long rectangular shape. *Make sure the other fourths of the dough stay under a towel in the bowl until used. This way the dough doesn't lose moisture.

Roll the dough into a rectangle.

Stretch out the dough as best you can...

Then use the pizza slicer to cut smaller rectangles (I like thicker noodles so i cut the noodles a little wider than say a spaghetti noodle.)

Next, unwrap all of the noodles and set on to a pan. Keep the noodles under a towel.

After rolling out all of the dough, and cutting up the noodles, I decided to boil the noodles right away. That way I could put the noodles into the fridge and use the next day for chicken noodle soup.

The noodles were ready pretty quickly! And they were quite delicious! This batch of dough made quite a lot of noodles, therefore you could probably freeze half of the batch and save for a later use!
