A Winter Remedy: Minestrone Soup

Minestrone Soup

I don't know about where you are, but it has been very cold here in the south lately. What is better than a big bowl of hot soup to warm you up! Not to mention I have been trying to slip different foods to my toddler without him really noticing. So I thought I'd make a big pot of this minestrone soup to have around the house during the long cold days we are having.

Ingredients:

1 cup dried pasta (I use Ditalini)

1 pound Italian sausage

1 cup chopped onion

1/2 cup chopped celery

1 1/2 chopped carrot

2 teaspoons minced garlic

6 cups vegetable stock

1 can pinto beans

1 can black eyed peas (I used some I cooked earlier in the week)

1 can diced tomatoes

salt

pepper

ground oregano

parsley flakes

 

Directions

-Prepare pasta according to package and set aside.

-Cook ground sausage in pot until browned. Drain.

-Add onion, carrot, celery, and garlic. Cook until tender (around 10 minutes), stirring occasionally.

-Add stock, beans, tomatoes, peas. Add salt, pepper, and oregano to taste. Cook for 20 minutes.

-During last 5 minutes add noodles and parsley. Once noodles are added they will soak up more of the stock so you may want to add some more at the end once you see how much the noodles will take.
