Butternut Squash Crustless Quiche

I have been spending a lot of time in the kitchen lately trying out some new fun ingredients and ways to use them that I haven't before. This time I grabbed a butternut squash.
Here is a delicious recipe for a quiche. It is crustless, colorful and so good. I think the butternut squash gives it a little bit of sweetness and lots of flavor. And to top it off it is super healthy!
Butternut Squash Crustless Quiche
1 sweet onion, chopped
olive oil
1 small butternut squash (or half a large one), cut into small chunks
1 red pepper, chopped
1 cup fresh spinach
salt and pepper to taste
10-12 eggs

To get started, preheat oven to 400 degrees. Dice up a butternut squash into small chunks, place on a baking sheet and coat evenly with olive oil. Place in oven and bake for 20-25 minutes until they are tender. When this is done cooking, turn down oven to 350.

While squash is baking, dice up the sweet onion and red pepper. Place in a skillet with a few tablespoons of olive oil and saute for 10-15 minutes. When they are almost finished, rip up a cup of spinach into smaller pieces and throw in with the onion and pepper. Stir for a few minutes.

Grab a large bowl and crack 10-12 eggs. Mix up the eggs, then add the spinach/pepper/onion mix, add the baked butternut squash stir together. Add salt and pepper, mix and pour into a pie pan, casserole dish or pan.

Bake in the oven for 30-40 min. It will become firm and golden brown.
Cut into pieces and serve.
